1 Jar of Peach Salsa
1 Can of corn, drained and rinsed
1 Can of black beans, drained and rinsed
1 lb. Cubed chicken, pork or beef stew meat
¼ Cup of diced onion
Oil

Brown onion in oil until tender, add meat and brown. Stir in Peach Salsa, corn, and black beans. Simmer 20-25 minutes. Serve with white or Spanish rice.
